To Begin
Escalope of salmon with Dublin Bay prawns and chive butter sauce
White and black pudding with smoked bacon poached free range egg and crispy bacon
Ham hock terrine with parsnip puree and micro coriander
Leek & Potato broth with homemade soda bread(v)
Main Course
Slow cooked beef with bacon Cabbage with mushrooms shallots and thyme jus
Pot roasted chicken breast with confit leg, celeriac puree, crispy bacon, baby carrots and truffle sauce
Fillet of cod loin with parsley cream, Vanilla potatoes and baby carrots
Vegetarian organic wellington, with smoked peppers, spinach, courgettes and creamed lentils (v)

VMF students by Craig Gent, Aston Villa’s, Pastry Chef
Bailey’s cheesecake, caramel sauce and vanilla ice-cream
New season rhubarb and custard tart, rhubarb fool and rhubarb crisps
Orange crème brulee, poached oranges, homemade shortbread biscuit
Valrhona chocolate and praline fondant, vanilla ice cream
Cashel blue from County Tipperary, gubeen from County Cork and goats boillie from County Cavan
Coffee with truffles and vanilla marshmallow
